Celeriac Salad

This salad is definitely one of my favorites. It takes 15 minutes to prepare. Let it sit from 10 minutes to overnight before eating.


1-2 cups of grated celeriac (celery root)




3 tablespoons tahini

1/4 cup olive oil

1/4 cup vinegar (I prefer apple cider or even pickle juice)

1/4 teaspoon salt


Mix dressing in a cup or bowl, until creamy and smooth. Pour over grated celeriac, mix well, and let sit at room temperature or in the fridge. Eat. With lentils, noodles, bread, cheese, meat, and/ or whatever.
